Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes. Add the egg, vanilla extract, and almond extract (if using), and mix until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets, spacing them about 2 inches apart. If desired, gently press the tops of the dough balls with a fork or your fingers to flatten them slightly. For a festive touch, roll the edges of the dough balls in colored sugar before baking.
  • Bake for 8-10 minutes, or until the edges of the cookies are lightly golden. Let the cookies cool completely on the baking sheets before transferring to a wire rack.
  • While the cookies cool, make the frosting: Beat the softened butter in a medium bowl until creamy. Gradually add the powdered sugar, heavy cream, and vanilla extract. Mix until smooth and fluffy. Add food coloring to achieve your desired shade of pink or red.
  • Once the cookies are completely cool, pair them up in matching sizes. Spread a generous amount of frosting on the bottom of one cookie, then top with another cookie to form a sandwich.
  • If desired, roll the edges of the sandwich cookies in additional colored sugar for a fun touch.
