Description

This hearty and flavorful Tomato Spinach Sausage Pasta combines savory sausage with fresh spinach, rich tomato sauce, and perfectly cooked pasta. It’s a simple, yet satisfying dish that’s sure to please the whole family!


Ingredients

  • 1½ cups uncooked basmati rice
  • 6 chicken thighs
  • 1 ½ tsp mixed herbs
  • 2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup chopped onion (any type of onion works)
  • 1 tbsp butter
  • 3 cups low sodium chicken stock
  • Salt and pepper to taste

 

  • ½ cup green onions (optional garnish, or substitute with chives, parsley, or coriander)

Instructions

  • Cook the Chicken: Season the chicken thighs with mixed herbs, smoked paprika, onion powder, garlic powder, salt, and pepper.
  • Sear the Chicken: Heat olive oil in a large pan over medium-high heat. Sear the chicken thighs until golden and cooked through. Remove from the pan and set aside.
  • Prepare the Base: In the same pan, add chopped onions and cook until soft. Add butter and cook until melted.
  • Simmer the Stock: Add chicken stock to the pan and stir to combine. Bring it to a simmer, allowing the flavors to meld together.

 

  • Finish the Dish: Slice the cooked chicken and add it back to the pan. Cook the rice separately according to package instructions and add it to the pan. Stir in green onions or other garnishes, and serve!

Notes

  • If you want to add a bit more richness, you can mix in a touch of cream or Parmesan cheese.
