These twice-baked potatoes are the ultimate comfort food! Russet potatoes are baked, scooped out, mixed with creamy sour cream, rich butter, and melty cheese, then baked again to perfection. Topped with crispy bacon and scallions, they make an irresistible side dish or snack.

  • 4 russet potatoes (large and firm)
  • Olive oil (for coating)
  • Salt (to sprinkle on the potatoes before baking)
  • ⅓ cup sour cream
  • 2 tablespoons butter
  • ½ cup Monterey Jack cheese, finely shredded
  • 1 cup cheddar cheese, finely shredded (reserve ¼ cup for topping)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup milk (use as needed for desired creaminess)
  • 2 slices bacon (cooked until crispy and chopped)
  • 1 scallion (thinly sliced for garnish)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Scrub the russet potatoes clean and pierce them a few times with a fork. Rub the potatoes with olive oil and sprinkle with salt.
  • Place the potatoes on a baking sheet and bake for about 45-60 minutes, until the potatoes are tender and the skins are crispy.
  • Once the potatoes are cool enough to handle, slice them in half lengthwise. Scoop out the flesh, leaving a small border around the edges, and place the potato flesh into a mixing bowl.
  • Mash the potato flesh with sour cream, butter, garlic powder, onion powder, salt, black pepper, and milk until smooth and creamy.
  • Stir in the Monterey Jack cheese, ¾ cup of cheddar cheese, and chopped bacon.
  • Spoon the mashed potato mixture back into the potato skins, dividing it evenly.
  • Sprinkle the reserved ¼ cup of cheddar cheese over the tops of the potatoes.
  • Return the potatoes to the oven and bake for another 10-15 minutes, until the cheese is melted and bubbly.
  • Garnish with thinly sliced scallions and serve hot.

Notes

  • To make these potatoes extra crispy, you can broil them for 2-3 minutes after the final bake.
