Description

These buttery, melt-in-your-mouth jam cookies are simply irresistible. With a soft, crumbly texture and a sweet, fruity jam center, these cookies are the perfect balance of flavors and textures. Whether you’re making them for a special occasion or just as a sweet treat, they’re sure to be a crowd-pleaser!

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup fruit jam or preserves (strawberry, raspberry, apricot, etc.)
  • Powdered sugar (optional, for dusting)

Instructions

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until the dough just comes together.
  • Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  • Use your thumb or a small spoon to create a well in the center of each cookie.
  • Fill each well with about ½ teaspoon of jam, being careful not to overfill.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, dust with powdered sugar if desired before serving.

Notes

  • Feel free to use any flavor of jam you prefer! Classic strawberry, raspberry, or even apricot work wonderfully.
  • These cookies can be stored in an airtight container at room temperature for up to 1 week.
  • For a fun twist, try using different shapes by pressing the dough with a cookie cutter before adding the jam.
