Ingredients
Scale
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup fruit jam or preserves (strawberry, raspberry, apricot, etc.)
- Powdered sugar (optional, for dusting)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until the dough just comes together.
- Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
- Use your thumb or a small spoon to create a well in the center of each cookie.
- Fill each well with about ½ teaspoon of jam, being careful not to overfill.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, dust with powdered sugar if desired before serving.
Notes
- Feel free to use any flavor of jam you prefer! Classic strawberry, raspberry, or even apricot work wonderfully.
- These cookies can be stored in an airtight container at room temperature for up to 1 week.
- For a fun twist, try using different shapes by pressing the dough with a cookie cutter before adding the jam.
