Ingredients
Scale
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or substitute with regular milk plus 1 teaspoon lemon juice or vinegar)
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- In a large bowl, mix the melted butter with the granulated sugar and brown sugar until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix in the buttermilk until the batter is smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Fold in the chopped pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, you can lightly toast the pecans before adding them to the batter.
- This bread is delicious on its own or served warm with a pat of butter or a drizzle of honey.
- To make it extra indulgent, serve with a scoop of vanilla ice cream.
