For the Cookies:
- ½ cup unsalted butter, slightly softened but still cool
- ⅔ cup granulated sugar
- ½ teaspoon pure vanilla extract
- ¼ teaspoon pure almond extract
- 1 large egg
- 1 ½ cups all-purpose flour, lightly spooned and leveled
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 3 tablespoons granulated sugar, for flattening
For the Frosting:
- 3 ounces cream cheese, softened
- 3 tablespoons unsalted butter, softened
- 1 ¾ cups powdered sugar, sifted (if lumpy)
- ½ teaspoon vanilla extract
- ⅛ teaspoon almond extract
- 1–2 teaspoons milk (if needed)
For the Fruit:
- 2–3 cups fresh fruit, chopped or sliced if necessary (e.g., strawberries, blueberries, kiwi, etc.)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together.
- Roll the dough into small balls (about 1 tablespoon each) and place them on a parchment-lined baking sheet. Gently flatten each cookie with the bottom of a glass, using the 3 tablespoons of sugar for sprinkling.
- Bake for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
- While the cookies cool, make the frosting: beat together the softened cream cheese, butter, powdered sugar, vanilla extract, and almond extract until smooth. Add milk as needed to achieve a spreadable consistency.
- Once the cookies have cooled, spread a layer of frosting on each cookie.
- Top with fresh fruit, arranging it in a decorative pattern.
- Serve immediately, or refrigerate until ready to serve.
