For the Cookies:

  • ½ cup unsalted butter, slightly softened but still cool
  • ⅔ cup granulated sugar
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon pure almond extract
  • 1 large egg
  • 1 ½ cups all-purpose flour, lightly spooned and leveled
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoons granulated sugar, for flattening

For the Frosting:

  • 3 ounces cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • 1 ¾ cups powdered sugar, sifted (if lumpy)
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon almond extract
  • 12 teaspoons milk (if needed)

For the Fruit:

  • 23 cups fresh fruit, chopped or sliced if necessary (e.g., strawberries, blueberries, kiwi, etc.)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  • Add the egg, vanilla extract, and almond extract, and mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together.
  • Roll the dough into small balls (about 1 tablespoon each) and place them on a parchment-lined baking sheet. Gently flatten each cookie with the bottom of a glass, using the 3 tablespoons of sugar for sprinkling.
  • Bake for 8-10 minutes or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack.
  • While the cookies cool, make the frosting: beat together the softened cream cheese, butter, powdered sugar, vanilla extract, and almond extract until smooth. Add milk as needed to achieve a spreadable consistency.
  • Once the cookies have cooled, spread a layer of frosting on each cookie.
  • Top with fresh fruit, arranging it in a decorative pattern.
  • Serve immediately, or refrigerate until ready to serve.

  • Feel free to use any fresh fruit you like for topping the cookies – berries, kiwi, or citrus work beautifully!
