Description

A moist white cake infused with strawberry gelatin, topped with a creamy whipped topping and fresh strawberries, creating a refreshing and flavorful dessert perfect for any occasion.

Ingredients

Scale

For the Cake:

  • 1 box (15.25 oz) white cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs

For the Strawberry Filling:

  • 1 box (3 oz) strawberry gelatin (e.g., Jell-O)
  • 1 cup boiling water

For the Topping:

  • 1 container (8 oz) whipped topping, thawed
  • 1 cup fresh strawberries, sliced

Instructions

  • Prepare the Cake:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×13-inch baking dish.
    • In a large bowl, combine the cake mix, water, vegetable oil, and eggs. Mix until smooth.
    • Pour the batter into the prepared baking dish and bake according to the package instructions, typically 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Strawberry Filling:
    • In a small bowl, dissolve the strawberry gelatin in 1 cup of boiling water, stirring until completely dissolved.
    • Let the mixture cool to room temperature.
  • Assemble the Cake:
    • Once the cake has cooled, use the handle of a wooden spoon to poke holes evenly across the surface of the cake.
    • Slowly pour the cooled strawberry gelatin mixture over the entire cake, ensuring it seeps into the holes.
    • Cover the cake and refrigerate for at least 2 hours, or until the gelatin is set.
  • Add the Topping:
    • Spread the whipped topping evenly over the chilled cake.
    • Garnish with sliced fresh strawberries.

Notes

  • For a richer flavor, consider using fresh strawberry puree mixed with the gelatin instead of the powdered mix.
  • Ensure the cake is completely cooled before adding the gelatin to prevent it from setting prematurely.
  • This cake can be made a day in advance, allowing the flavors to meld and the gelatin to set properly.
