Description

This creamy Chicken Casserole combines tender chicken, hearty rice, and a deliciously tangy Greek yogurt sauce. Topped with crumbled feta and fresh herbs, it’s the perfect dish for a comforting weeknight dinner!


Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup long-grain white rice (uncooked)
  • 1 1/2 cups chicken broth or water
  • 1 cup plain Greek yogurt
  • 1/3 cup grated cucumber (squeeze out excess water)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried dill (or 2 teaspoons fresh dill, chopped)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and black pepper, to taste
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese (optional)

 

  • 1/4 cup chopped fresh parsley or cilantro (for garnish)

Instructions

  • Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through. Remove the chicken from the pan and set it aside.
  • Cook the Aromatics: In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  • Combine the Ingredients: In a large casserole dish, combine the cooked chicken, uncooked rice, chicken broth (or water), Greek yogurt, grated cucumber (with excess water squeezed out), dill, oregano, cumin, and lemon juice. Season with salt and pepper to taste.
  • Bake the Casserole: Cover the casserole dish with aluminum foil and bake in a preheated oven at 375°F (190°C) for about 30-35 minutes or until the rice is cooked and the casserole is bubbly.
  • Top with Feta and Herbs: Once the casserole is done, remove it from the oven. Top with crumbled feta cheese (if using) and fresh parsley or cilantro.

 

  • Serve and Enjoy: Let the casserole sit for a few minutes before serving. Enjoy this creamy, flavorful dish!

Notes

  • You can substitute the Greek yogurt with sour cream for a different flavor.
  • Adjust the herbs to your preference, and add extra veggies like spinach or peas for added texture.
