Description

These Snickerdoodle Truffles are creamy, cinnamon-spiced bites of heaven! Made with Golden Oreos, cream cheese, and coated in rich white chocolate, they’re a no-bake treat that delivers all the cozy flavors of a classic snickerdoodle cookie — in truffle form!

For the Filling:

  • 1 (14.3-ounce) package Golden Oreos (about 36 sandwich cookies)

  • 8 ounces block-style cream cheese, softened

  • 3 teaspoons cinnamon

For the Coating:

  • 20 ounces Ghirardelli white chocolate wafers, divided and melted

  • 2 tablespoons granulated sugar

  • 1½ teaspoons cinnamon, divided


Instructions

  1. Make the filling:
    Add the Golden Oreos to a food processor and pulse until finely crushed. Add softened cream cheese and cinnamon, and blend until fully combined and the mixture forms a dough-like consistency.

  2. Shape the truffles:
    Scoop the mixture and roll into 1-inch balls. Place them on a baking sheet lined with parchment paper. Freeze for 15–20 minutes until firm.

  3. Prepare the coating:
    In a small bowl, mix the granulated sugar with ½ teaspoon of the cinnamon. Set aside for topping.

  4. Melt chocolate:
    Melt 18 ounces of the white chocolate wafers in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Reserve 2 ounces for drizzling or touch-ups.

  5. Coat the truffles:
    Using a fork or dipping tool, dip each chilled truffle into the melted chocolate, letting the excess drip off. Place back on the parchment-lined tray.

  6. Finish with cinnamon sugar:
    Immediately sprinkle with the cinnamon-sugar mixture before the chocolate sets. Optional: drizzle with reserved melted white chocolate for decoration.

  7. Chill and serve:
    Refrigerate truffles for 15–20 minutes to fully set. Store in the fridge in an airtight container.

Notes

Use a cookie scoop for even-sized truffles.

These can be made up to 5 days in advance and stored chilled.

If you don’t have white chocolate wafers, high-quality white chocolate chips will work too — just add a teaspoon of coconut oil to smooth the melt.
