Ingredients

2 pounds (about 8 pieces) boneless, skinless chicken thighs

1/3 cup low-sodium soy sauce

1/3 cup honey

1/3 cup ketchup

1 teaspoon fresh ginger, grated

Instructions

Prepare the Sauce:
In a bowl, whisk together the soy sauce, honey, ketchup, minced garlic, apple cider vinegar, grated ginger, and crushed red pepper flakes until well combined. -
Cook the Chicken:
Place the chicken thighs in the slow cooker. Pour the prepared sauce over the chicken, ensuring each piece is well coated. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the chicken is tender and fully cooked. -
Thicken the Sauce:
Once the chicken is cooked, remove it from the slow cooker and set aside. In a small bowl, mix the cornstarch with a little cold water to create a slurry. Stir this mixture into the sauce in the slow cooker. Cover and cook on HIGH for an additional 30 minutes, or until the sauce has thickened to a glaze-like consistency. -
Serve:
Return the chicken to the slow cooker, coating it with the thickened sauce. Serve over rice, garnished with chopped scallions and sesame seeds.
Notes
For a spicier kick, increase the amount of crushed red pepper flakes.
