- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/4 cup sour cream
-
For the frosting:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp heavy cream
- Red or pink food coloring (optional)
- Valentine’s Day sprinkles or heart-shaped decorations for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In alternating batches, add the dry ingredients and the milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
- Add the sour cream and gently fold it into the batter until smooth.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting: In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar and beat until smooth.
- Add vanilla extract and 2 tablespoons of heavy cream, and beat until the frosting reaches a smooth and spreadable consistency. Add more cream if necessary.
- Add a few drops of food coloring if you want the frosting to be pink or red. Mix until fully incorporated.
- Frost the cooled cupcakes with a generous swirl of frosting. Top with Valentine’s Day sprinkles or heart-shaped decorations.
- Serve and enjoy!
