Description

Start your day with these delicious Sausage Egg and Cheese Breakfast Roll-Ups! A savory combination of scrambled eggs, sausage, and cheddar cheese, wrapped in soft flour tortillas and lightly browned to perfection. A quick and satisfying breakfast for busy mornings!

Ingredients

Scale
  • 1 lb breakfast sausage
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • Butter or oil for greasing

Instructions

  • Cook the Sausage:
In a large skillet over medium heat, cook the breakfast sausage, breaking it up into small pieces as it cooks. Stir occasionally until browned and fully cooked. Remove from the skillet and set aside.

  • Prepare the Egg Mixture:
In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  • Cook the Eggs:
In the same skillet, add a bit of butter or oil and pour in the egg mixture. Cook over medium-low heat, stirring occasionally until the eggs are soft and scrambled. Remove from the skillet and set aside.

  • Assemble the Roll-Ups:
Lay the flour tortillas flat on a clean surface. Evenly distribute the cooked sausage and scrambled eggs onto each tortilla. Sprinkle with shredded cheddar cheese.

  • Roll the Tortillas:
Carefully roll up each tortilla tightly, securing the filling inside.

  • Cook the Roll-Ups:
Heat a little butter or oil in the same skillet over medium heat. Place the roll-up seam side down and cook for 2-3 minutes, turning to brown all sides and melt the cheese inside.

  • Serve:
Slice the roll-ups into bite-sized pieces and serve warm.

Notes

  • You can substitute the sausage with turkey sausage or a vegetarian sausage option if you prefer.
  • Add extra veggies like bell peppers or onions for a flavorful twist.
