Description
A one-pan wonder with savory chicken or turkey sausage, tender sweet potatoes, and crisp broccoli, all coated in a sweet and tangy honey garlic sauce. Topped with fresh parsley, this dish is the perfect balance of sweet, savory, and nutritious.
Ingredients
-
14 oz chicken or turkey sausage, cut into 1/2-in slices
-
2 medium sweet potatoes, cut into 1/2-in cubes
-
2 cups broccoli, cut into 1/2-in florets
-
1 tablespoon unsalted butter
-
4 medium cloves garlic, minced
-
1/4 cup honey
-
1/4 cup low-sodium soy sauce
-
1 tablespoon apple cider vinegar
-
Salt and pepper to taste
-
2 tablespoons minced fresh parsley
Instructions
-
Cook the sausage: In a large skillet, heat a bit of oil over medium heat. Add the chicken or turkey sausage slices and cook for 5-6 minutes until browned and cooked through. Remove from the pan and set aside.
-
Cook the sweet potatoes: In the same skillet, add the diced sweet potatoes. Sauté for about 8-10 minutes, stirring occasionally, until the potatoes are tender and slightly caramelized.
-
Add broccoli: Add the broccoli florets to the skillet and cook for another 5 minutes until they are tender-crisp.
-
Make the honey garlic sauce: While the veggies cook, in a small bowl, whisk together the honey, soy sauce, apple cider vinegar, minced garlic, salt, and pepper.
-
Combine: Add the sausage back to the skillet, followed by the honey garlic sauce. Stir everything together and let it cook for another 2-3 minutes until everything is coated in the sauce and heated through.
-
Finish and serve: Remove from heat, sprinkle with minced parsley, and serve hot.
Notes
-
Feel free to swap in other vegetables like bell peppers or green beans if you prefer.
-
You can use any type of sausage, but chicken or turkey sausage keeps it lighter.
-
For extra heat, add red pepper flakes to the sauce.
