Description

This Roasted Chicken with Garlic and Herbs is a simple yet flavorful dish that brings out the natural juiciness of the chicken.   • 1 whole chicken (about 45 pounds)

  • 2 tbsp olive oil

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 6 cloves garlic, minced

  • 1 lemon, halved

  • Salt and pepper, to taste

  • 1/2 cup chicken broth (optional, for basting)

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat the Oven: Preheat your oven to 425°F (220°C).

  • Prepare the Chicken: Remove the giblets from the chicken and pat it dry with paper towels. Season generously inside and out with salt and pepper.

  • Make the Herb Mixture: In a small bowl, combine olive oil, chopped rosemary, thyme, and minced garlic.

  • Stuff the Chicken: Rub the herb mixture all over the chicken, making sure to get some under the skin and inside the cavity. Place the halved lemon inside the chicken cavity.

  • Roast the Chicken: Place the chicken on a roasting rack or a baking sheet, breast side up. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.

  • Baste (Optional): Halfway through the roasting, baste the chicken with chicken broth or its own juices to keep the meat moist.

  • Rest the Chicken: Remove the chicken from the oven and let it rest for 10 minutes before carving.

 

  • Serve: Garnish with fresh parsley and serve with your favorite sides.
