Ingredients

Scale

For the Cookies:

  • 2½ cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 2 tablespoons red food coloring

For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Cookie Dough:

    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
    • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the egg, buttermilk, vanilla extract, white vinegar, and red food coloring until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Bake the Cookies:

    • Using a cookie scoop or tablespoon, drop rounded scoops of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 9-11 minutes, or until the edges are set.
    • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Prepare the Cream Cheese Frosting:

    • In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.
    • Gradually add the powdered sugar and vanilla extract, continuing to beat until the frosting is light and fluffy.
  • Assemble the Cookies:

    • Once the cookies have cooled completely, spread a generous amount of cream cheese frosting on the top of each cookie.
    • For an extra touch, you can sprinkle red velvet cake crumbs or red sprinkles on top.

Notes

  • Ensure the cookies are completely cooled before frosting to prevent the frosting from melting.
  • Store the frosted cookies in an airtight container in the refrigerator for up to one week.
