Description

These soft and chewy red velvet cookies are made with a cake mix, simplifying the baking process while delivering a festive treat that’s perfect for Valentine’s Day.

Ingredients

Scale
  • 1 box (15.25 oz) red velvet cake mix
  • 2 large eggs
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup white chocolate chips (optional)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  • Mix Dough: In a large bowl, combine the red velvet cake mix, eggs, and softened butter. Mix until a dough forms. If desired, fold in the white chocolate chips.
  • Form Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  • Bake: Bake for 8-10 minutes, or until the edges are set. The centers may appear slightly soft; they will firm up as they cool.
  • Cool: Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a dairy-free version, substitute the butter with a plant-based alternative.
  • To enhance the flavor, you can add a teaspoon of vanilla extract to the dough.
  • These cookies can be stored in an airtight container at room temperature for up to one week.
