Ingredients
Scale
- 1 tablespoon olive oil
- 1 pound asparagus, ends trimmed, cut into 2-inch pieces
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 1/4 cup chicken broth
- 1 tablespoon lemon juice
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese, plus more for serving
- 1 package (20 ounces) refrigerated cheese ravioli
Instructions
- Cook the Ravioli:
- Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions (usually 3-4 minutes). Once cooked, drain and set aside, reserving a bit of the pasta water.
- Sauté the Vegetables:
- While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add the asparagus and cook for 4-5 minutes, until slightly tender.
- Add the halved cherry tomatoes and minced garlic to the skillet, and cook for an additional 2-3 minutes, until the tomatoes soften and the garlic becomes fragrant. Season with salt and pepper.
- Add Broth and Lemon Juice:
- Pour in the chicken broth and lemon juice, stirring to combine. Let it simmer for another 2 minutes to reduce slightly.
- Combine Ravioli and Vegetables:
- Add the cooked ravioli to the skillet with the vegetables. Toss gently to coat the ravioli in the sauce. If the mixture seems dry, add a splash of the reserved pasta water to reach the desired consistency.
- Finish with Fresh Herbs and Parmesan:
- Stir in the fresh basil, parsley, and grated Parmesan cheese, tossing everything together until well combined and the cheese has melted.
- Serve:
- Serve the ravioli in bowls, topped with extra Parmesan cheese if desired. Enjoy this fresh and flavorful dish!
