- 1 cup peanut butter (smooth or crunchy)
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup peanut butter cups (mini or regular size), chopped (optional for filling)
- 1/4 cup chocolate chips (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.
- In a large mixing bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until smooth.
- Add the egg and vanilla extract, and mix until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Roll the dough into small balls, about 1-inch in diameter, and place each one into the muffin tin.
- Use your thumb or a spoon to press each dough ball into the center of the muffin tin, creating an indentation.
- If using chopped peanut butter cups, place a piece inside each indentation.
- Bake for 10-12 minutes, or until golden brown around the edges.
- Remove from the oven and press a few chocolate chips into the center of each cookie cup (if using).
- Let the cookie cups cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- These cookie cups can be stored in an airtight container for up to 4-5 days.
- For extra flavor, you can drizzle melted chocolate on top of the cookie cups after they cool.
- You can substitute mini chocolate chips or any chocolate you prefer.
