- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper.
- Sear the Chicken: Heat olive oil in a large pan over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove from the pan and set aside.
- Sauté Aromatics: In the same pan, add chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
- Cook the Rice: Add the rice to the pan, stirring to coat with the onion and garlic mixture. Pour in chicken broth and bring to a simmer.
- Make it Creamy: Stir in the heavy cream and Parmesan cheese, then return the chicken breasts to the pan.
- Simmer: Cover the pan, reduce heat to low, and simmer for 20-25 minutes until the rice is tender and the sauce has thickened.
- Finish & Serve: Garnish with fresh parsley before serving.
Notes
- You can use bone-in chicken for extra flavor, but adjust the cooking time accordingly.
- Feel free to add vegetables like spinach or peas to the dish for extra color and nutrients.
- If the sauce is too thick, add a little more chicken broth to reach your desired consistency.
