One-Pan Creamy Parmesan Chicken & Rice

Description

This easy, one-pan dish combines tender chicken breasts with creamy Parmesan rice for a comforting, flavorful meal. Perfect for busy weeknights, this dish is a savory blend of chicken, rice, garlic, and Parmesan cheese that will satisfy the whole family. Plus, cleanup is a breeze with just one pan to wash!


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup long-grain white rice

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 1 cup grated Parmesan cheese

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.

  • Cook the chicken breasts for 6-7 minutes on each side, or until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.

  • In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.

  • Add the rice to the skillet, stirring to coat it with the oil and onion mixture.

  • Pour in the chicken broth and heavy cream, stirring to combine.

  • Bring the mixture to a simmer, then reduce the heat to low. Return the chicken breasts to the skillet on top of the rice.

  • Sprinkle the grated Parmesan cheese over the chicken and rice. Cover the skillet with a lid and simmer for 20-25 minutes, until the rice is tender and the liquid is absorbed.

 

  • Garnish with fresh parsley before serving.

Notes

  • You can substitute the heavy cream with half-and-half for a lighter version.

  • If you prefer a stronger Parmesan flavor, add extra grated cheese to taste.

  • You can also use bone-in chicken breasts, but cooking time will need to be adjusted.

  • For extra flavor, try adding a squeeze of lemon juice before serving.
