Ingredients

4 boneless, skinless chicken breasts

1 cup long-grain white rice

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 small onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)
Instructions

Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.

Cook the chicken breasts for 6-7 minutes on each side, or until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.

Add the rice to the skillet, stirring to coat it with the oil and onion mixture.

Pour in the chicken broth and heavy cream, stirring to combine.

Bring the mixture to a simmer, then reduce the heat to low. Return the chicken breasts to the skillet on top of the rice.

Sprinkle the grated Parmesan cheese over the chicken and rice. Cover the skillet with a lid and simmer for 20-25 minutes, until the rice is tender and the liquid is absorbed.
