For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup eggnog (store-bought or homemade)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup heavy whipping cream (chilled)
For the Berry Topping:
- 1 cup fresh mixed berries (such as strawberries, raspberries, and blueberries)
- 1 tbsp honey or maple syrup (optional, to sweeten berries)
Instructions
- Make the Crust:
- In a medium bowl, mix the graham cracker crumbs and granulated sugar together.
- Add the melted butter and stir until the mixture is evenly combined and the crumbs are moistened.
- Divide the crust mixture evenly between 6 serving glasses or jars. Press the crumbs down firmly to form a compact base.
- Make the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the powdered sugar, eggnog, vanilla extract, cinnamon, and nutmeg. Beat until fully combined and smooth.
- In a separate chilled bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the eggnog mixture until well incorporated and fluffy.
- Assemble the Cheesecakes:
- Spoon the cheesecake filling over the prepared graham cracker crusts, filling each glass or jar.
- Smooth the top of the filling with a spoon or spatula.
- Chill:
- Refrigerate the cheesecakes for at least 4 hours, or preferably overnight, to allow them to set and firm up.
- Prepare the Berry Topping:
- Just before serving, toss the fresh berries with honey or maple syrup (optional) to lightly sweeten them.
- Spoon the berries on top of the chilled cheesecakes.
- Serve:
- Garnish with a sprinkle of cinnamon or nutmeg if desired, and serve chilled. Enjoy the creamy, spiced goodness of this festive treat!
