Description

This No-Bake Chocolate Eclair Cake is a decadent dessert that combines layers of creamy vanilla pudding, graham crackers, and a rich chocolate frosting. It’s an easy and irresistible treat that requires no baking!


Ingredients

  • 2 (3.4 oz) boxes instant vanilla pudding mix
  • 3 cups cold milk
  • 1 (8 oz) container whipped topping, thawed

 

  • 1 box graham crackers

Instructions

  • In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until it thickens (about 2-3 minutes).
  • Gently fold in the whipped topping until well combined.
  • In a 9×13-inch baking dish, arrange a layer of graham crackers on the bottom.
  • Spread half of the pudding mixture over the graham crackers.
  • Add another layer of graham crackers and top with the remaining pudding mixture.
  • Finish with a final layer of graham crackers on top.
  • In a separate bowl, mix together the unsweetened cocoa powder, powdered sugar, melted butter, milk, and vanilla extract to make the frosting.
  • Pour the chocolate frosting over the top layer of graham crackers.
  • Refrigerate the cake for at least 4 hours or overnight, allowing the flavors to meld and the dessert to firm up.
