This Million Dollar Crack Dip, also known as Bruschetta Dip, is a creamy, savory, and tangy delight that combines rich feta and cream cheese with a refreshing, marinated tomato and basil topping. It’s the perfect party dip that will have everyone coming back for more, whether served with crackers, pita chips, or toasted bread.

For the Bruschetta:

  • 4 Roma tomatoes
  • 1/4 cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt to taste

For the Cheese:

  • 8 oz feta cheese block, crumbled
  • 1/2 block cream cheese (4 oz)
  • 1/2 cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon olive oil
  • Salt to taste

To Garnish:

  • More basil leaves, chopped
  • Red pepper flakes
  • Freshly grated parmesan cheese

Instructions

  • Prepare Bruschetta: Core and dice the Roma tomatoes into small cubes. In a medium bowl, combine the tomatoes, basil, garlic, olive oil, balsamic vinegar, and salt. Toss to coat. Set aside to marinate for 10 minutes.
  • Make the Cheese Mixture: In the bowl of your food processor, add all the cheese dip ingredients (feta cheese, cream cheese, sour cream, garlic, lemon juice, olive oil, and salt). Puree for 3-4 minutes until smooth and creamy, scraping the bowl halfway through.
  • Assemble: Scoop the cheese mixture onto a shallow serving plate or bowl. Top with the marinated bruschetta mixture.
  • Garnish: Sprinkle the top with red pepper flakes, parmesan cheese, and more fresh basil.
  • Serve: Serve with crackers, pita chips, or toasted bread.

Notes

  • For a tangier flavor, add more balsamic vinegar to the bruschetta mixture.
