Ingredients
Scale
- 2 slices of whole-grain or sourdough bread
- 1 ripe avocado
- 1 cup frozen or canned corn kernels (or fresh if available)
- 1 tablespoon mayonnaise
- 1 tablespoon sour cream (optional)
- 1 teaspoon chili powder (or to taste)
- 1/2 teaspoon cumin
- 1 tablespoon fresh lime juice
- 2 tablespoons crumbled cotija cheese (or feta)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Lime wedges for serving (optional)
Instructions
- Toast the bread slices to your desired crispness.
- While the bread is toasting, heat a small pan over medium heat and add the corn. Cook for 3-4 minutes until it’s slightly charred, stirring occasionally.
- In a small bowl, mix mayonnaise, sour cream (if using), chili powder, cumin, lime juice, salt, and pepper.
- In a separate bowl, mash the avocado with a fork until smooth, then season with a pinch of salt.
- Once the bread is toasted, spread the mashed avocado evenly over each slice.
- Top the avocado with the cooked corn mixture.
- Sprinkle with crumbled cotija cheese and fresh cilantro (optional).
- Serve with lime wedges on the side for an extra zesty kick.
Notes
- You can make the corn mixture ahead of time and store it in the fridge for quick assembly.
- For extra crunch, sprinkle some crushed tortilla chips or chili flakes on top.
- Adjust the level of spice by adding more chili powder or a sprinkle of hot sauce.
