Description

Transform your toast into a flavor-packed meal with this Mexican Street Corn Avocado Toast recipe! In just 15 minutes, you’ll enjoy creamy avocado, sweet corn, zesty lime, and a sprinkle of cotija cheese. It’s the perfect fusion of fresh, bold flavors on a crispy slice of toasted bread.

Ingredients

Scale
  • 2 slices of whole-grain or sourdough bread
  • 1 ripe avocado
  • 1 cup frozen or canned corn kernels (or fresh if available)
  • 1 tablespoon mayonnaise
  • 1 tablespoon sour cream (optional)
  • 1 teaspoon chili powder (or to taste)
  • 1/2 teaspoon cumin
  • 1 tablespoon fresh lime juice
  • 2 tablespoons crumbled cotija cheese (or feta)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  • Toast the bread slices to your desired crispness.
  • While the bread is toasting, heat a small pan over medium heat and add the corn. Cook for 3-4 minutes until it’s slightly charred, stirring occasionally.
  • In a small bowl, mix mayonnaise, sour cream (if using), chili powder, cumin, lime juice, salt, and pepper.
  • In a separate bowl, mash the avocado with a fork until smooth, then season with a pinch of salt.
  • Once the bread is toasted, spread the mashed avocado evenly over each slice.
  • Top the avocado with the cooked corn mixture.
  • Sprinkle with crumbled cotija cheese and fresh cilantro (optional).
  • Serve with lime wedges on the side for an extra zesty kick.

Notes

  • You can make the corn mixture ahead of time and store it in the fridge for quick assembly.
  • For extra crunch, sprinkle some crushed tortilla chips or chili flakes on top.
  • Adjust the level of spice by adding more chili powder or a sprinkle of hot sauce.
