Ingredients
Scale
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes (packed in oil), chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Cook the chicken: Heat olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
- Sauté the vegetables: In the same pot, add the chopped onion and garlic. Cook for 2-3 minutes, or until softened and fragrant.
- Add sun-dried tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
- Add broth and cream: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
- Season the soup: Add dried basil, oregano, red pepper flakes (if using), salt, and pepper. Stir to combine.
- Return chicken to the pot: Add the cooked chicken back into the soup. Simmer for another 5-7 minutes to let the flavors meld together.
- Finish the soup: Stir in the grated Parmesan cheese and adjust seasoning to taste. If the soup is too thick, you can add a little more broth or cream to reach your desired consistency.
- Serve: Ladle the soup into bowls and garnish with chopped fresh parsley. Serve with crusty bread for dipping, if desired.
Notes
- For a lower-carb version, skip the bread and serve the soup with a side salad.
- You can add vegetables like spinach or zucchini for extra nutrition.
- If you want a richer flavor, add extra Parmesan or a splash of white wine while simmering the soup.
