- 1 cup buttermilk
- 1/2 cup shredded cheddar cheese

- 1/4 cup crumbled bacon
- Vegetable oil for frying
Instructions
- Prepare the Potatoes: Peel and cut the russet potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.
- Coating: In a shallow bowl, mix the all-purpose flour, Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
- Dip Fries in Buttermilk: Dip each potato fry into the buttermilk, allowing excess liquid to drip off. Then, dredge the fries in the seasoned flour mixture, ensuring they’re evenly coated.
- Fry the Fries: Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Fry the coated fries in batches for about 3-4 minutes or until golden and crispy. Remove from the oil and drain on paper towels.
- Top the Fries: Arrange the crispy fries on a serving platter. Immediately sprinkle with shredded cheddar and Monterey Jack cheeses while the fries are still hot so the cheese melts. Top with sliced jalapeños, chopped green onions, and crumbled bacon.
