- 1 large head of cauliflower (cleaned and trimmed)
- 1 cup chicken stock (or vegetable stock for a vegetarian version)
- 3 cloves garlic (minced)
- 1/2 cup sour cream
- 8 oz cream cheese (softened)
- 2 cups sharp cheddar cheese (shredded)
- 4 slices of bacon (cooked crispy and crumbled)
- 2 green onions (thinly sliced)
- Sea salt and black pepper (to taste)
Instructions
- Prepare the cauliflower: Cut the cauliflower into florets and steam it in a pot with chicken stock for about 10-12 minutes until tender.
- Mash the cauliflower: Once steamed, drain any excess liquid and mash the cauliflower using a potato masher or a hand blender until smooth.
- Mix in creamy ingredients: In a separate bowl, combine the sour cream, cream cheese, and half of the shredded cheddar cheese. Stir until well combined and smooth.
- Combine: Add the cream mixture to the mashed cauliflower, then stir in the minced garlic. Season with sea salt and black pepper to taste.
- Assemble the casserole: Pour the mashed cauliflower mixture into a baking dish. Top with the remaining cheddar cheese and crumbled bacon.
- Bake: Place in the oven at 350°F (175°C) and bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish and serve: Remove from the oven and garnish with green onions before serving.
