Description

This Loaded Cauliflower Casserole is a comforting, creamy, and cheesy dish that’s perfect as a side or even a main course. Packed with sharp cheddar, crispy bacon, and a creamy base, it’s a flavorful way to enjoy cauliflower with all the indulgence of a loaded casserole!


Ingredients

  • 1 large head of cauliflower (cleaned and trimmed)
  • 1 cup chicken stock (or vegetable stock for a vegetarian version)
  • 3 cloves garlic (minced)
  • 1/2 cup sour cream
  • 8 oz cream cheese (softened)
  • 2 cups sharp cheddar cheese (shredded)
  • 4 slices of bacon (cooked crispy and crumbled)
  • 2 green onions (thinly sliced)
  • Sea salt and black pepper (to taste)

Instructions

  • Prepare the cauliflower: Cut the cauliflower into florets and steam it in a pot with chicken stock for about 10-12 minutes until tender.
  • Mash the cauliflower: Once steamed, drain any excess liquid and mash the cauliflower using a potato masher or a hand blender until smooth.
  • Mix in creamy ingredients: In a separate bowl, combine the sour cream, cream cheese, and half of the shredded cheddar cheese. Stir until well combined and smooth.
  • Combine: Add the cream mixture to the mashed cauliflower, then stir in the minced garlic. Season with sea salt and black pepper to taste.
  • Assemble the casserole: Pour the mashed cauliflower mixture into a baking dish. Top with the remaining cheddar cheese and crumbled bacon.
  • Bake: Place in the oven at 350°F (175°C) and bake for 20-25 minutes, or until the cheese is melted and bubbly.

 

  • Garnish and serve: Remove from the oven and garnish with green onions before serving.

Notes

  • For a lower-carb option, you can replace sour cream with Greek yogurt.
  • This casserole can be made ahead and stored in the refrigerator for up to 2 days before baking.
