Description

This delectable Lemon Chicken features tender chicken breasts coated in a crispy Parmesan crust, topped with a rich garlic butter sauce infused with fresh lemon juice. It’s a delightful blend of savory and citrus flavors, making it an ideal choice for a weeknight dinner or special occasion.


Ingredients

For the Chicken:

For the Garlic Butter Sauce:

  • 1/4 cup unsalted butter

  • 4 cloves garlic, minced

  • 1/4 cup fresh lemon juice

  • Zest of 1 lemon

  • Salt and freshly ground black pepper, to taste

  • Chopped fresh parsley, for garnish


Instructions

  • Prepare the Chicken:

    • Season both sides of the chicken breasts with salt and pepper.

    • Set up a breading station:

      • In one shallow dish, place the flour.

      • In another dish, beat the eggs.

      • In a third dish, spread the Parmesan cheese.

    • Dredge each chicken breast in flour, shaking off excess, then dip in beaten eggs, and finally coat with Parmesan, pressing gently to adhere.

  • Cook the Chicken:

    • In a large skillet, heat olive oil and butter over medium heat until melted and hot.

    • Add the breaded chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through.

    • Remove the chicken from the skillet and set aside.

  • Prepare the Garlic Butter Sauce:

    • In the same skillet, melt the butter over medium heat.

    • Add the minced garlic and sauté for 1-2 minutes, until fragrant.

    • Stir in the lemon juice and lemon zest, scraping up any browned bits from the skillet.

    • Season with salt and pepper to taste.

 

  • Combine and Serve:

    • Return the cooked chicken breasts to the skillet, spooning some of the sauce over each piece.

    • Cook for an additional 2-3 minutes to heat through.

    • Garnish with chopped fresh parsley before serving.

Notes

  • For a lighter version, you can skip the breading and simply season the chicken breasts before cooking.
