Ingredients
For the Scallops:
-
1 tablespoon unsalted butter
-
1 pound sea scallops
-
Kosher salt and freshly ground black pepper, to taste
For the Lemon Butter Sauce:
-
2 tablespoons unsalted butter
-
3 cloves garlic, minced
-
3 tablespoons freshly squeezed lemon juice
-
Kosher salt and freshly ground black pepper, to taste
-
2 tablespoons chopped fresh parsley leaves
Instructions
-
Prepare the scallops: Pat the scallops dry with a paper towel to remove excess moisture. Season with kosher salt and freshly ground black pepper on both sides.
-
Sear the scallops: Heat 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter is melted and hot, add the scallops to the pan. Cook for about 2-3 minutes per side until the scallops are golden brown and opaque in the center. Remove from the skillet and set aside.
-
Make the lemon butter sauce: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
-
Stir in the freshly squeezed lemon juice, and season with salt and pepper to taste. Let the sauce simmer for about 1-2 minutes to combine the flavors.
-
Finish the dish: Return the seared scallops to the skillet and toss to coat them in the lemon butter sauce. Sprinkle with chopped fresh parsley and serve immediately.
Notes
-
Be sure to pat the scallops dry before searing them; this helps them get a nice golden crust.
-
For extra flavor, you can add a pinch of red pepper flakes to the sauce for a bit of heat.
