Description

These juicy and tender sea scallops are seared to perfection and served with a rich and zesty lemon butter sauce. A simple yet elegant dish that’s bursting with fresh flavors, perfect for a weeknight dinner or a special occasion.


Ingredients

For the Scallops:

  • 1 tablespoon unsalted butter

  • 1 pound sea scallops

  • Kosher salt and freshly ground black pepper, to taste

For the Lemon Butter Sauce:

  • 2 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • 3 tablespoons freshly squeezed lemon juice

  • Kosher salt and freshly ground black pepper, to taste

  • 2 tablespoons chopped fresh parsley leaves


Instructions

  • Prepare the scallops: Pat the scallops dry with a paper towel to remove excess moisture. Season with kosher salt and freshly ground black pepper on both sides.

  • Sear the scallops: Heat 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter is melted and hot, add the scallops to the pan. Cook for about 2-3 minutes per side until the scallops are golden brown and opaque in the center. Remove from the skillet and set aside.

  • Make the lemon butter sauce: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.

  • Stir in the freshly squeezed lemon juice, and season with salt and pepper to taste. Let the sauce simmer for about 1-2 minutes to combine the flavors.

 

  • Finish the dish: Return the seared scallops to the skillet and toss to coat them in the lemon butter sauce. Sprinkle with chopped fresh parsley and serve immediately.

Notes

  • Be sure to pat the scallops dry before searing them; this helps them get a nice golden crust.

  • For extra flavor, you can add a pinch of red pepper flakes to the sauce for a bit of heat.
