  • 2 salmon fillets
  • 1 pound Brussels sprouts, trimmed and halved
  • 3 tablespoons honey
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • Lemon wedges for serving (optional)

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together honey, soy sauce, garlic, Dijon mustard, olive oil, salt, and pepper.
  • Arrange the Brussels sprouts on a baking sheet and drizzle with a bit of olive oil, salt, and pepper. Roast for 15 minutes.
  • While the Brussels sprouts are roasting, heat a non-stick skillet over medium-high heat. Add the salmon fillets, skin side down, and cook for 3-4 minutes per side until golden brown and cooked through.
  • After 15 minutes, remove the Brussels sprouts from the oven. Drizzle the honey garlic sauce over the salmon fillets, then return the baking sheet to the oven for another 5-7 minutes, allowing the sauce to caramelize.
  • Serve the salmon with the roasted Brussels sprouts, garnishing with a squeeze of fresh lemon juice (optional).
