Ingredients
Scale
- 2 salmon fillets
- 1 pound Brussels sprouts, trimmed and halved
- 3 tablespoons honey
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- Lemon wedges for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together honey, soy sauce, garlic, Dijon mustard, olive oil, salt, and pepper.
- Arrange the Brussels sprouts on a baking sheet and drizzle with a bit of olive oil, salt, and pepper. Roast for 15 minutes.
- While the Brussels sprouts are roasting, heat a non-stick skillet over medium-high heat. Add the salmon fillets, skin side down, and cook for 3-4 minutes per side until golden brown and cooked through.
- After 15 minutes, remove the Brussels sprouts from the oven. Drizzle the honey garlic sauce over the salmon fillets, then return the baking sheet to the oven for another 5-7 minutes, allowing the sauce to caramelize.
- Serve the salmon with the roasted Brussels sprouts, garnishing with a squeeze of fresh lemon juice (optional).
Notes
- You can substitute Brussels sprouts with other veggies such as broccoli or green beans.
- Adjust the amount of honey based on your preferred sweetness level.
- For extra flavor, add a sprinkle of red pepper flakes for a spicy kick.
