Description

A lighter take on the classic Broccoli Cheddar Soup, this healthy version uses low-fat ingredients without sacrificing flavor. The combination of creamy cottage cheese and sharp cheddar makes for a comforting and delicious bowl of soup. Perfect for a healthy meal that’s both satisfying and nutritious.


Ingredients

  • 1 tablespoon butter
  • 1 large yellow onion, diced
  • 2 large carrots, peeled and diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 1/2 teaspoon smoked paprika
  • 3 cups vegetable broth (not-chicken style)
  • 4 cups chopped broccoli
  • 2 cups 1% milk
  • 4 oz cheddar cheese, shredded (about 1 cup)
  • 1 cup low-fat cottage cheese, blended
  • Salt & pepper to taste

Instructions

  • In a large pot, melt butter over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  • Add the minced garlic and cook for another 1 minute until fragrant.
  • Stir in the flour and smoked paprika, cooking for 1-2 minutes to make a roux.
  • Slowly add the vegetable broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for about 5 minutes until it begins to thicken.
  • Add the chopped broccoli and continue to simmer for 10-12 minutes, or until the broccoli is tender.
  • Pour in the 1% milk, stirring until the soup is creamy.
  • Add the shredded cheddar cheese and blended cottage cheese. Stir until both cheeses are fully melted and the soup is smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with extra cheddar cheese if desired.

Notes

  • For a gluten-free version, use gluten-free flour.
  • If you prefer a smoother soup, you can blend part or all of the soup for a creamier texture.
