A lighter take on the classic Broccoli Cheddar Soup, this healthy version uses low-fat ingredients without sacrificing flavor. - 1 tablespoon butter
- 1 large yellow onion, diced
- 2 large carrots, peeled and diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour (or gluten-free flour)
- 1/2 teaspoon smoked paprika
- 3 cups vegetable broth (not-chicken style)
- 4 cups chopped broccoli
- 2 cups 1% milk
- 4 oz cheddar cheese, shredded (about 1 cup)
- 1 cup low-fat cottage cheese, blended
- Salt & pepper to taste
Instructions
- In a large pot, melt butter over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Stir in the flour and smoked paprika, cooking for 1-2 minutes to make a roux.
- Slowly add the vegetable broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for about 5 minutes until it begins to thicken.
- Add the chopped broccoli and continue to simmer for 10-12 minutes, or until the broccoli is tender.
- Pour in the 1% milk, stirring until the soup is creamy.
- Add the shredded cheddar cheese and blended cottage cheese. Stir until both cheeses are fully melted and the soup is smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra cheddar cheese if desired.
Notes
- For a gluten-free version, use gluten-free flour.
- If you prefer a smoother soup, you can blend part or all of the soup for a creamier texture.
