For The Chicken Marinade:
- 1 lb chicken breast, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- Salt and pepper, to taste
For The Tzatziki Sauce:
- 1 cup Greek yogurt
- ½ cucumber, grated and drained
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh dill (or mint)
- Salt and pepper, to taste
For The Gyros:
- 4 pita bread rounds
- ½ cup chopped tomatoes
- ½ cup sliced red onions
- ½ cup chopped cucumber
- ¼ cup crumbled feta cheese
- ¼ cup chopped parsley
Instructions
For The Chicken Marinade:
- In a bowl, mix together olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper.
- Add the sliced chicken to the marinade and toss to coat. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the fridge.
For The Tzatziki Sauce:
- In a bowl, combine Greek yogurt, grated cucumber (make sure it’s well-drained), garlic, lemon juice, olive oil, and dill (or mint). Season with salt and pepper to taste.
- Stir everything together until smooth. Refrigerate until ready to serve.
For The Gyros:
- Heat a grill pan or skillet over medium heat. Cook the marinated chicken for 5-7 minutes, until fully cooked and golden brown.
- Warm the pita bread rounds in a dry skillet for 1-2 minutes on each side.
- To assemble the gyros, place a warm pita on a plate. Add a few spoonfuls of cooked chicken, then top with chopped tomatoes, sliced red onions, chopped cucumber, crumbled feta cheese, and chopped parsley.
- Drizzle with tzatziki sauce and fold the pita around the filling.
