Description

This tropical dessert features rum-infused pineapple rings, coated in a crispy coconut crust. The sweet and savory combination of dark and coconut rum pairs perfectly with the soft pineapple, creating a decadent treat that’s ideal for any beachside celebration or exotic dinner.

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 1/2 cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • 1/2 cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese (softened)

 

  • 1/2 cup powdered sugar

Instructions

  • Soak the pineapple rings in the dark rum and coconut rum for about 30 minutes to an hour to infuse the flavors.
  • In a bowl, whisk together the all-purpose flour, coconut flakes, and a pinch of salt.
  • In a separate bowl, beat the eggs and coconut milk together.
  • Heat vegetable oil in a large pan over medium heat.
  • Dip each pineapple ring into the egg mixture, followed by coating it with the coconut-flour mixture.
  • Fry the coated pineapple rings in the hot oil until golden brown and crispy, about 2-3 minutes per side.
  • Remove the fried pineapple rings from the oil and drain them on paper towels.
  • For the cream cheese sauce, beat together the softened cream cheese and powdered sugar until smooth.

 

  • Serve the fried pineapple rings with the cream cheese sauce on the side for dipping.

Notes

  • Serve with a scoop of vanilla ice cream for an extra indulgent treat.
  • If you prefer a stronger coconut flavor, you can add a splash of coconut extract to the egg mixture.
