- 8 pineapple rings
- 1 cup dark rum
- 1 cup coconut rum
- 1 1/2 cups all-purpose flour
- 1 (10-oz.) bag sweetened coconut flakes
- 2 large eggs
- 1/2 cup coconut milk
- Vegetable oil (for frying)
- 4 oz. cream cheese (softened)
- 1/2 cup powdered sugar
Instructions
- Soak the pineapple rings in the dark rum and coconut rum for about 30 minutes to an hour to infuse the flavors.
- In a bowl, whisk together the all-purpose flour, coconut flakes, and a pinch of salt.
- In a separate bowl, beat the eggs and coconut milk together.
- Heat vegetable oil in a large pan over medium heat.
- Dip each pineapple ring into the egg mixture, followed by coating it with the coconut-flour mixture.
- Fry the coated pineapple rings in the hot oil until golden brown and crispy, about 2-3 minutes per side.
- Remove the fried pineapple rings from the oil and drain them on paper towels.
- For the cream cheese sauce, beat together the softened cream cheese and powdered sugar until smooth.
- Serve the fried pineapple rings with the cream cheese sauce on the side for dipping.
Notes
- Serve with a scoop of vanilla ice cream for an extra indulgent treat.
- If you prefer a stronger coconut flavor, you can add a splash of coconut extract to the egg mixture.
- You can also use fresh pineapple if canned is not available.
