For the macarons:
- 1 3/4 cups powdered sugar
- 1 cup almond flour
- 3 large egg whites, at room temperature
- 1/4 cup granulated sugar
- 1/2 tsp vanilla extract
- Pinch of cream of tartar (optional)
For the filling:
- 1/2 cup unsalted butter, softened
- 1 1/4 cups powdered sugar
- 1/2 tsp vanilla extract
- 2 tbsp heavy cream
- Food coloring (optional)
Instructions
- Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper or silicone baking mats.
- Sift together the powdered sugar and almond flour in a bowl to remove any lumps. Set aside.
- In a clean, dry mixing bowl, beat the egg whites with a pinch of cream of tartar (if using) until they form soft peaks. Gradually add the granulated sugar and continue to beat until stiff peaks form.
- Gently fold the sifted dry ingredients into the egg whites using a spatula. Be careful not to deflate the meringue; the mixture should flow slowly off the spatula but not be too runny.
- Once the batter is ready, transfer it to a piping bag fitted with a round tip. Pipe small, round circles (about 1 1/2 inches in diameter) onto the prepared baking sheets.
- Tap the baking sheets on the counter to release any air bubbles. Let the macarons sit at room temperature for 30 minutes to form a skin.
- Bake the macarons for 15-20 minutes, or until they are firm to the touch and can easily be removed from the parchment paper. Allow them to cool completely.
- To make the filling, beat the softened butter until smooth. Gradually add powdered sugar, vanilla extract, and heavy cream, and mix until light and fluffy.
- Pipe a small amount of filling onto the flat side of one macaron and top it with another macaron to form a sandwich.
- Refrigerate the macarons for at least 24 hours to allow the flavors to meld and the texture to improve. Bring them to room temperature before serving.
Notes
- Macarons can be finicky. If they don’t turn out perfect, don’t be discouraged! Practice makes perfect.
- The macarons will keep in an airtight container in the fridge for up to 1 week.
- You can flavor the filling with chocolate, fruit, or any other flavor you like!
