Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ¼ cup sprinkles or colored sugar (for decoration)
  • ½ teaspoon salt

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  • In a large bowl, cream together the butter and sugar until light and fluffy, about 2 minutes.
  • Beat in the egg and vanilla extract (and almond extract if using).
  • Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  • Roll the dough into small balls (about 1 tablespoon each) and place them on an ungreased baking sheet.
  • Flatten each cookie slightly with the bottom of a glass or your fingers. If desired, sprinkle with sugar or sprinkles.
  • Bake for 8-10 minutes or until the edges are lightly golden.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For softer cookies, don’t over-bake them. Pull them out when the edges are just barely golden.
