Description

  • 1 lb (450g) boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 2 cups cooked rice (white, brown, or jasmine rice)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)
  • Fresh veggies of your choice (such as steamed broccoli, shredded carrots, or cucumber slices)
  • Salt and pepper to taste

Instructions

  1. Cook the Chicken:
    Heat the olive oil in a large skillet over medium heat. Season the chicken with salt and pepper. Add the chicken to the skillet and cook for 6-8 minutes on each side (depending on thickness) until fully cooked and golden brown. Once cooked, remove the chicken from the pan and set it aside to rest.

  2. Prepare the Sticky Sauce:
    In the same skillet, reduce the heat to low. Add the soy sauce, honey (or brown sugar), rice vinegar, sesame oil, garlic, ginger, and red pepper flakes (if using). Stir to combine, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for 2-3 minutes until slightly thickened.

  3. Coat the Chicken:
    Slice the cooked chicken into strips and add it back into the skillet with the sauce. Toss the chicken in the sauce to coat it evenly and allow it to simmer for an additional 2 minutes, making sure the chicken absorbs the sticky sauce.

  4. Assemble the Rice Bowl:
    Divide the cooked rice into bowls. Top with the sticky chicken and drizzle with the extra sauce from the skillet. Garnish with sesame seeds, green onions, and fresh veggies of your choice.

  5. Serve and Enjoy:

Notes

  • You can use chicken breasts instead of thighs for a leaner option, though thighs tend to be juicier.
