Description

These Easy Gluten-Free Chicken Taquitos are crispy, cheesy, and full of flavor. With a perfectly seasoned chicken filling and a creamy cheese mixture, these taquitos make for a great appetizer, snack, or main dish that’s both gluten-free and easy to prepare.

For the Chicken:

  • 2 chicken breasts, butterflied and pounded about ½” thick (or use pre-cooked chicken or a vegetarian option)

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ⅛ teaspoon cayenne (optional)

For the Taquitos:

  • 4 oz softened cream cheese

  • 2 cups shredded cheese (cheddar or marble)

  • ½ cup salsa

  • Avocado oil spray (for spraying the taquitos)

  • 16 small 6” corn tortillas (ensure they are gluten-free)


Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, paprika, salt, black pepper, and cayenne (if using).

  • Season both sides of the chicken breasts with the spice mix.

  • Heat a skillet over medium-high heat and cook the chicken breasts for about 3-4 minutes on each side or until fully cooked and golden brown. Let the chicken rest for a few minutes, then shred it using two forks.

  • In a medium bowl, combine the shredded chicken, cream cheese, shredded cheese, and salsa. Stir until well combined.

  • Heat the corn tortillas in a dry skillet or microwave to make them pliable. Spray both sides with avocado oil.

  • Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla and roll them tightly.

  • Place the taquitos seam-side down on the prepared baking sheet.

  • Spray the taquitos with more avocado oil and bake for 20-25 minutes or until golden and crispy.

 

  • Serve with your favorite dipping sauce like sour cream or guacamole.

Notes

Vegetarian option: Replace the chicken with a plant-based protein like tofu or beans.

Pre-cooked chicken: You can use leftover rotisserie chicken or any pre-cooked chicken you have on hand to save time.
