These Easy Gluten-Free Chicken Taquitos are crispy, cheesy, and full of flavor. With a perfectly seasoned chicken filling and a creamy cheese mixture, these taquitos make for a great appetizer, snack, or main dish that’s both gluten-free and easy to prepare.
Ingredients
For the Chicken:

2 chicken breasts, butterflied and pounded about ½” thick (or use pre-cooked chicken or a vegetarian option)

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

⅛ teaspoon cayenne (optional)
For the Taquitos:

4 oz softened cream cheese

2 cups shredded cheese (cheddar or marble)

½ cup salsa
-
Avocado oil spray (for spraying the taquitos)

16 small 6” corn tortillas (ensure they are gluten-free)
Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, paprika, salt, black pepper, and cayenne (if using).

Season both sides of the chicken breasts with the spice mix.

Heat a skillet over medium-high heat and cook the chicken breasts for about 3-4 minutes on each side or until fully cooked and golden brown. Let the chicken rest for a few minutes, then shred it using two forks.

In a medium bowl, combine the shredded chicken, cream cheese, shredded cheese, and salsa. Stir until well combined.

Heat the corn tortillas in a dry skillet or microwave to make them pliable. Spray both sides with avocado oil.

Spoon about 2-3 tablespoons of the chicken mixture onto each tortilla and roll them tightly.

Place the taquitos seam-side down on the prepared baking sheet.

Spray the taquitos with more avocado oil and bake for 20-25 minutes or until golden and crispy.

Serve with your favorite dipping sauce like sour cream or guacamole.
Notes
Vegetarian option: Replace the chicken with a plant-based protein like tofu or beans.
Pre-cooked chicken: You can use leftover rotisserie chicken or any pre-cooked chicken you have on hand to save time.
