Description

This hearty and flavorful Crockpot Chili combines ground beef, beans, tomatoes, and a blend of spices, simmered to perfection in your slow cooker. It’s a comforting meal that’s perfect for busy days and can be customized with your favorite toppings.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions

  • In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain any excess fat.
  • Transfer the cooked beef to the Crockpot.
  • Add the diced onion and minced garlic to the Crockpot.
  • Add the kidney beans, black beans, diced tomatoes, tomato paste, and beef broth.
  • Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  • Stir all ingredients until well combined.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Before serving, taste and adjust seasoning if necessary.

Notes

  • For a thicker chili, you can mash some of the beans with a potato masher before cooking.
  • Feel free to add other vegetables like bell peppers or corn for added flavor and texture.
