- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain any excess fat.
- Transfer the cooked beef to the Crockpot.
- Add the diced onion and minced garlic to the Crockpot.
- Add the kidney beans, black beans, diced tomatoes, tomato paste, and beef broth.
- Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using).
- Stir all ingredients until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Before serving, taste and adjust seasoning if necessary.
Notes
- For a thicker chili, you can mash some of the beans with a potato masher before cooking.
- Feel free to add other vegetables like bell peppers or corn for added flavor and texture.
