Description

This Easter Poke Cake is a vibrant and festive treat that’s perfect for your Easter celebration. With a light, fluffy cake soaked in colorful Jello, topped with a creamy whipped topping, and decorated with pastel candies, it’s as fun to make as it is to eat!

  • 1 box white cake mix (plus ingredients required on the box)
  • 1 box (3 oz) flavored gelatin (such as Jello, in pastel colors like strawberry, orange, or lime)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 container (8 oz) whipped topping (like Cool Whip)
  • 1/2 cup sweetened condensed milk (optional for added creaminess)

 

  • Easter-themed candy (such as jelly beans, Peeps, or pastel M&M’s) for garnish

Instructions

  1. Prepare the cake: Preheat the oven according to the instructions on the cake mix box. Prepare the cake mix as directed, pour it into a 9×13-inch baking pan, and bake as directed. Once done, allow the cake to cool in the pan for about 15 minutes.

  2. Poke the cake: Once the cake has cooled slightly, use the end of a wooden spoon or a fork to poke holes all over the cake. Make sure the holes are evenly spaced, but don’t go all the way through the cake.

  3. Prepare the Jello: Dissolve each flavored gelatin in 1 cup of boiling water. Stir well until the gelatin is completely dissolved. Then, add 1 cup of cold water to each gelatin mix.

  4. Pour the Jello: Slowly pour the Jello mixture over the cake, making sure to pour it into the holes. Repeat this process for each flavor of Jello, alternating colors to create a rainbow effect. Let the cake sit at room temperature for about 30 minutes.

  5. Make the topping: In a separate bowl, combine the whipped topping and sweetened condensed milk (optional) until smooth. Spread this mixture over the cooled, Jello-soaked cake.

  6. Garnish: Decorate with Easter-themed candies like pastel jelly beans, Peeps, or M&M’s.

  7. Chill: Refrigerate the cake for at least 2 hours to allow the Jello to fully set and the flavors to meld.

  8. Serve: Once chilled, cut into squares and serve this delightful Easter treat!
