This delicious stir fry features thinly sliced beef sirloin or flank steak cooked in a savory sticky sauce with colorful vegetables like bell peppers, broccoli, and green onions, all served over rice noodles. 8 oz (225g) rice noodles (or lo mein/udon noodles)

1 lb (450g) beef sirloin or flank steak, thinly sliced

2 tbsp cornstarch

3 tbsp vegetable oil, divided

1 red bell pepper, thinly sliced

2 cups (120g) broccoli florets

3 green onions, sliced (plus extra for garnish)

2 garlic cloves, minced

1 tbsp fresh ginger, grated
For the Sticky Sauce:

1/4 cup (60ml) soy sauce

2 tbsp hoisin sauce

2 tbsp honey or brown sugar

2 tbsp rice vinegar (or lime juice)

1 tbsp sesame oil
-
1/4 tsp red pepper flakes (optional, for heat)
Instructions

Prepare the Noodles:

Cook the rice noodles according to package instructions. Drain and set aside.

Prepare the Sticky Sauce:

In a small bowl, whisk together soy sauce, hoisin sauce, honey or brown sugar, rice vinegar (or lime juice), sesame oil, and red pepper flakes. Set aside.

Cook the Beef:

In a large bowl, toss the thinly sliced beef with cornstarch until evenly coated.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef in batches, cooking until browned on both sides (about 2-3 minutes per side). Remove the beef from the skillet and set aside.

Sauté the Vegetables:

In the same skillet, add the remaining vegetable oil. Add the red bell pepper, broccoli florets, and green onions. Sauté for about 3-4 minutes, until the vegetables are tender-crisp.

Add the minced garlic and grated ginger and cook for another 1-2 minutes, until fragrant.

Combine and Simmer:

Return the cooked beef to the skillet along with the sticky sauce. Toss everything together until the beef and vegetables are evenly coated in the sauce.

Add the cooked noodles to the skillet and toss to combine. Let it cook for an additional 2-3 minutes to allow the noodles to absorb some of the sauce.
