1½ pounds boneless, skinless chicken thighs (about 5–6 thighs)

½ teaspoon dried thyme

½ teaspoon garlic powder

1¾ cups low-sodium chicken broth

1 carrot, peeled and sliced

1 onion, chopped

10.5 ounces cream of chicken soup (1 can)

½ cup frozen peas

16.3 ounces refrigerated biscuit dough (8 large biscuits)

Chopped fresh parsley (optional, for garnish)
Instructions

Prepare the chicken and seasoning: In your Crockpot, add the chicken thighs, salt, pepper, bay leaf, parsley, rosemary, thyme, garlic powder, and chicken broth.

Add vegetables: Toss in the sliced carrot, chopped onion, and peas. Stir to combine.

Cook: Cover and cook on low for 5-6 hours or until the chicken is cooked through and tender.

Shred the chicken: Once done, remove the chicken thighs from the Crockpot and shred them with two forks. Return the shredded chicken back into the pot.

Add cream of chicken soup: Stir in the can of cream of chicken soup, mixing until everything is well combined.

Prepare the dumplings: Tear the biscuit dough into smaller pieces and drop them over the top of the soup mixture in the Crockpot.

Cook the dumplings: Cover and cook for another 1 hour on high or until the dumplings are cooked through.
