Ingredients

  • pounds boneless, skinless chicken thighs (about 56 thighs)

  • ½ teaspoon kosher salt

  • ½ teaspoon ground black pepper

  • 1 bay leaf

  • 1 teaspoon dried parsley

  • ½ teaspoon dried rosemary

  • ½ teaspoon dried thyme

  • ½ teaspoon garlic powder

  • 1¾ cups low-sodium chicken broth

  • 1 carrot, peeled and sliced

  • 1 onion, chopped

  • 10.5 ounces cream of chicken soup (1 can)

  • ½ cup frozen peas

  • 16.3 ounces refrigerated biscuit dough (8 large biscuits)

  • Chopped fresh parsley (optional, for garnish)


Instructions

  1. Prepare the chicken and seasoning: In your Crockpot, add the chicken thighs, salt, pepper, bay leaf, parsley, rosemary, thyme, garlic powder, and chicken broth.

  2. Add vegetables: Toss in the sliced carrot, chopped onion, and peas. Stir to combine.

  3. Cook: Cover and cook on low for 5-6 hours or until the chicken is cooked through and tender.

  4. Shred the chicken: Once done, remove the chicken thighs from the Crockpot and shred them with two forks. Return the shredded chicken back into the pot.

  5. Add cream of chicken soup: Stir in the can of cream of chicken soup, mixing until everything is well combined.

  6. Prepare the dumplings: Tear the biscuit dough into smaller pieces and drop them over the top of the soup mixture in the Crockpot.

  7. Cook the dumplings: Cover and cook for another 1 hour on high or until the dumplings are cooked through.

  8. Garnish and serve: If desired, sprinkle chopped fresh parsley on top before serving.

Notes

  • You can substitute chicken breasts for thighs if preferred.

  • For a richer flavor, use regular chicken broth instead of low-sodium.

  • This recipe is great for freezing! Just omit the dumplings until you are ready to cook.
