Description

Golden, crispy on the outside, and fluffy on the inside—these smashed potatoes are the perfect side dish to elevate any meal.


Ingredients

  • 700g / 1.4 lb small potatoes (12–14) or 1–1.2kg / 2–2.4 lb medium potatoes (6–8)

  • 1 tbsp salt (for boiling)

  • 30g / 2 tbsp unsalted butter, melted

  • 1 tbsp olive oil

  • 3/4 tsp salt (for sprinkling)

  • 1/4 tsp black pepper

  • Finely chopped parsley, optional garnish


Instructions

  • Preheat oven to 220°C (425°F).

  • Scrub potatoes clean; no need to peel.

  • In a large pot, bring water to a boil and add 1 tbsp salt.

  • Add potatoes and cook until tender (20–25 minutes for small, 30 minutes for medium).

  • Drain and let rest for 5 minutes to enhance crispiness.

  • Place potatoes on a baking sheet and gently smash each with a fork or potato masher.

  • Drizzle with melted butter and olive oil.

  • Sprinkle with 3/4 tsp salt and 1/4 tsp black pepper.

  • Bake for 45–55 minutes until golden and crispy.

 

  • Garnish with chopped parsley before serving

Notes

For extra flavor, drizzle with browned butter infused with garlic.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a hot oven for 10 minutes or in an air fryer for 5 minutes.
