- 2 lbs (900g) baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 tsp paprika (optional for color)
- 1 tsp dried thyme or rosemary (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, melted butter, olive oil, minced garlic, salt, black pepper, paprika (if using), and dried thyme or rosemary (if using). Toss until the potatoes are well coated.
- Spread the potatoes out on a baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes or until golden brown and crispy, flipping the potatoes halfway through.
- Remove from the oven, and garnish with freshly chopped parsley before serving.
Notes
- You can adjust the herbs and spices based on your personal preference.
- For extra crispiness, you can broil the potatoes for an additional 1-2 minutes after they are done roasting.
