Ingredients
Scale
For the whoopie pies:
- 1 3/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup buttermilk
For the filling:
- 1/2 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup marshmallow fluff
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the dry ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- Mix the wet ingredients: In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined.
- Add the dry ingredients: Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk. Start and end with the dry ingredients. Mix until smooth.
- Form the whoopie pies: Using a spoon or ice cream scoop, drop rounded tablespoons of dough onto the prepared baking sheet. Leave space between each dollop.
- Bake for 8–10 minutes, or until a toothpick inserted into the center comes out clean. Let the whoopie pies cool completely on a wire rack.
- Prepare the filling: In a medium bowl, beat together the butter, powdered sugar, vanilla, and marshmallow fluff until smooth and fluffy.
- Assemble: Spread a generous amount of filling onto the flat side of one whoopie pie, then top with another whoopie pie to form a sandwich.
- Serve and enjoy!
Notes
- Make sure to let the whoopie pies cool completely before adding the filling to avoid it melting.
- For a Valentine’s Day touch, you can sprinkle red or pink heart-shaped sprinkles on the edges of the pies or on the filling.
