Instructions
- Line a baking sheet with parchment paper.
- In a medium bowl, combine the Greek yogurt, honey, and vanilla extract. Mix well.
- Gently fold in the chopped strawberries.
- Scoop spoonfuls of the yogurt-strawberry mixture onto the prepared baking sheet, shaping them into clusters.
- In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.
- Drizzle the melted chocolate over the yogurt clusters.
- Place the baking sheet in the freezer and let the clusters freeze for about 2 hours, or until fully set.
- Once frozen, store the clusters in an airtight container in the freezer until ready to serve.
