  • 10 Medjool dates (pitted)
  • 1/2 cup roasted peanuts (unsalted)
  • 1/4 cup peanut butter (smooth or chunky)
  • 1/2 cup dark chocolate (70% cocoa or higher)
  • 1 tablespoon coconut oil (optional, for smoother chocolate)
  • 1/2 teaspoon sea salt (optional, for sprinkling)

Instructions

  • Line a baking sheet with parchment paper or a silicone mat.
  • Slice each date lengthwise to open it, then remove the pit. Fill each date with a spoonful of peanut butter, then sprinkle a few roasted peanuts inside each one. Close the dates.
  • Melt the dark chocolate and coconut oil together in a heatproof bowl over a pot of simmering water (double boiler method) or in the microwave in 20-second intervals, stirring each time.
  • Once the chocolate is melted and smooth, dip each stuffed date into the chocolate, coating it completely. Place the chocolate-covered dates on the prepared baking sheet.
  • After all dates are dipped in chocolate, sprinkle a small pinch of sea salt on top of each piece (optional).
  • Place the baking sheet in the fridge or freezer for 20-30 minutes to allow the chocolate to harden.
  • Once the bark is set, break it into pieces or serve as individual treats.
