Description

  • 1 cup whole milk
  • 6 ounces high-quality dark chocolate (chopped)
  • 5 large egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Whipped cream (optional for garnish)

Instructions

  • Preheat your oven to 325°F (163°C).
  • In a medium saucepan, combine the cream, milk, and chopped chocolate. Heat over medium heat, stirring occasionally until the chocolate melts and the mixture is smooth.
  • In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and salt.
  • Slowly pour the warm chocolate mixture into the egg yolks while whisking continuously to temper the eggs.
  • Once combined, strain the mixture through a fine-mesh sieve to remove any curdled bits.
  • Divide the custard into small ramekins or pots. Place the pots in a baking dish, then pour hot water into the dish to create a water bath that comes halfway up the sides of the pots.
  • Bake for about 30 minutes, or until the custard is set but still slightly jiggly in the center.
  • Let the pots cool to room temperature, then refrigerate for at least 2 hours before serving.
  • Optionally, top with whipped cream before serving.
