Instructions
- Preheat your oven to 325°F (163°C).
- In a medium saucepan, combine the cream, milk, and chopped chocolate. Heat over medium heat, stirring occasionally until the chocolate melts and the mixture is smooth.
- In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and salt.
- Slowly pour the warm chocolate mixture into the egg yolks while whisking continuously to temper the eggs.
- Once combined, strain the mixture through a fine-mesh sieve to remove any curdled bits.
- Divide the custard into small ramekins or pots. Place the pots in a baking dish, then pour hot water into the dish to create a water bath that comes halfway up the sides of the pots.
- Bake for about 30 minutes, or until the custard is set but still slightly jiggly in the center.
- Let the pots cool to room temperature, then refrigerate for at least 2 hours before serving.
- Optionally, top with whipped cream before serving.
