Ingredients
Scale
- 2 chicken breasts (boneless, skinless)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 2 tablespoons Chipotle ranch dressing (or homemade)
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sliced red onions (optional)
- 1/2 cup cooked rice (optional)
- 1/4 cup black beans (optional)
Instructions
- Preheat your grill or grill pan to medium-high heat.
- In a small bowl, combine olive oil, salt, pepper, paprika, garlic powder, onion powder, cumin, and chili powder.
- Coat the chicken breasts with the seasoning mixture, ensuring they are evenly coated.
- Grill the chicken for about 6-8 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing it into thin strips.
- While the chicken is resting, prepare the tortillas by warming them on the grill or in a skillet.
- Assemble the burritos: Lay each tortilla flat, and layer with a handful of shredded lettuce, diced tomatoes, cheese, sliced chicken, and any additional toppings like black beans, rice, or red onions.
- Drizzle Chipotle ranch dressing over the top, then fold the tortilla and roll it tightly to form a burrito.
- Serve immediately, or wrap in foil for an easy-to-go meal.
Notes
- You can use store-bought Chipotle ranch dressing or make your own by mixing ranch dressing with a bit of chipotle in adobo sauce and lime juice.
- Customize the burrito with extra toppings like guacamole, sour cream, or jalapeños for added flavor.
