Description

These healthy, gluten-free chickpea blondies are a deliciously soft and chewy treat! Made with chickpeas, almond butter, and a hint of maple syrup, these blondies are a nutritious twist on the classic dessert. They’re rich in protein and fiber, making them a perfect guilt-free snack or dessert.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed (or about 1 1/2 cups cooked chickpeas)
  • 1/4 cup almond butter (or peanut butter)
  • 1/4 cup maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips (optional)
  • 1/4 cup rolled oats (optional, for extra texture)

Instructions

  • Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.
  • In a food processor or high-powered blender, add the drained chickpeas, almond butter, maple syrup, vanilla extract, baking soda, and salt. Blend until smooth and creamy, scraping down the sides as needed.
  • Fold in oats and mini chocolate chips, if using.
  • Pour the batter into the prepared baking pan and smooth the top with a spatula.
  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the blondies cool for about 10 minutes before transferring them to a wire rack to cool completely. Slice into squares and enjoy!

Notes

  • These blondies are naturally gluten-free and can easily be made vegan by using maple syrup and non-dairy butter.
  • You can store these blondies in an airtight container for up to 4–5 days. They also freeze well for longer storage.
  • If you prefer, substitute almond butter with peanut butter or cashew butter for a different flavor.
