Instructions
- Cook the pasta: Cook the egg noodles according to package instructions, drain, and set aside.
- Cook the chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until fully cooked through. Remove from the skillet and set aside to rest.
- Make the sauce: In the same skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 3 minutes. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream, thyme, and parsley. Let simmer for 5 minutes until the sauce slightly thickens.
- Combine noodles and chicken: Slice the cooked chicken into strips or cubes. Add the drained noodles to the sauce, tossing to coat. Stir in the remaining 2 tablespoons of butter until melted and the noodles are creamy.
- Serve: Top the noodles with the sliced chicken, sprinkle with Parmesan cheese (if using), and garnish with fresh parsley. Serve hot.
